Sort of like the the Song from Queen.  Well not really.  This is about saving time and cooking quickly but keeping it healthy.  The answer is the Pressure Cooker.  Many people are still afraid of them but the new pressure cookers are not like Grandma's and they are very unlikely to Blow up if you use them as instructed.  There's no better way to cook something quickly yet keep all the flavor.  I recommend getting one, or at least researching them if you need more information.

Overall this was a great recipe since it was QUICK, EASY, and HEALTHY.  If I were to make any changes it would be to add a bit more seasoning overall since the potatoes and cauliflower tend to be fairly bland vegetables to begin with.
