Moosewood has been putting out some amazing recipes and cook books for many years now and this carrot ginger soup has been one of my favorites for quite a while now.  It can be served alone as a midday lunch or as a dinner appetizer.  Not only that, it freezes extremely well.  Original Recipe can be found here.

For a Vegan version just omit the cream and drizzle a little olive oil on top.  This is a great recipe to keep in mind when you see a great sale on carrots at the farmers market as well.
