Using up the rest of yesterday's KIWI's, this is a great salad that combines several flavors together.  It's all savory, sweet, and bitter at the same time.

Ingredients:

4 Cups Baby Arugala, rinsed and dried

1 Cucumber sliced

2 Kiwi's sliced

1/4 Cup Chopped Walnuts

 

Dressing:

3 TBSP Lemon Juice 

1/2 tsp salt

1/8 tsp black pepper

6 TBSP Olive Oil

1.  For the dressing combine all ingredients in a mason jar or dressing jar.  Cover and shake for 30 seconds.

2.  Layer the Arugala with the slices of cucumbers and kiwi.  Top with Walnut pieces

3.  Spoon about 1/2 of the dressing on the top of the salad.
